FOOD PREPARATION: TILAPIA ROLLS

Tilapia Rolls

       ·         1 kilo Tilapia sticks
       ·         1 cup soy sauce
       ·         1 cup brown sugar
       ·         1/8 cup calamansi juice
       ·         1 clove garlic
       ·         1 tbsp. black pepper
       ·         100 pcs. Lumpia wrapper

Procedure

       1.       Prepare the marinating solution by mixing sugar and soy sauce

       2.       Stir until sugar is dissolved

       3.       Mix all other ingredients and soak the fish for 1 hour

       4.       Drain and pack

       5.       Keep frozen

FOOD PREPARATION: TILAPIA NUGGETS

Tilapia Nuggets
·         3 cups minced fish
      ·         1 ½ cups white onion (chopped)
      ·         6 tbsp. breadcrumbs
      ·         1 tbsp. salt
      ·         2 tbsp. garlic
      ·         1/3 cup wheat flour
      ·         2 tsp. white sugar
      ·         1 tbsp. cooking oil
      ·         1 cup shrimp meat
      ·         Breadcrumbs for coating
      ·         Clean the fish, remove internal organs, gills, scales etc.
      ·         Behead the fish
      ·         Wash thoroughly
·         Fillet the fish
·         Pass into grinder and mix all ingredients
·         Stuff manually, wash and drain
·         Pack using vacuum machine
·         Keep frozen

Procedure

       1.       Mix minced fish meat and salt

       2.       Add the rest of the ingredients until sticky

       3.       Mold or form into desired size

       4.       Dip nugget in a cool commercially prepared batter mix

       5.       Roll with breadcrumbs

       6.       Pack and keep frozen

FOOD PREPARATIONS: TILAPIA TOCINO

Tilapia Tocino


       ·         1 kilo fillet
       ·         8 tbsp. brown sugar
       ·         8 tbsp. soy sauce
       ·         1 whole garlic fresh
       ·         1 tbsp. black pepper

Procedure 

       1.       Clean the fish, remove internal organs, gills, scales etc.

       2.       Behead the fish

       3.       Wash carefully

       4.       Fillet the fish

       5.       Pass into grinder and mix all ingredients

       6.       Stuff manually, wash and drain

       7.       Pack using vacuum machine

       8.       Keep frozen

FOOD PREPARATIONS: TILAPIA LONGGANISA

Tilapia Longganisa

  •          1 kilo fillet
  •          8 tbsp. brown sugar
  •          8 tbsp. soy sauce (minced)
  •          1 tbsp. black pepper
  •          Pig casing
  •          1 tbsp. Salt


Procedure

  1.         Clean the fish, remove internal organs, gills, scales etc.
  2.     . . Behead the fish
  3.     Wash thoroughly
  4.         Fillet the fish
  5.         Pass into grinder and mix all ingredients
  6.         Stuff manually, wash and drain
  7.         Pack using vacuum machine
  8.         Keep frozen

FOOD PREPARATIONS: SIMPLE PORK EMBOTIDO

Simple Pork Embotido
  • 1 kilo ground pork
  • 1/2 cup chopped carrots
  • ¼ cup chopped bell pepper (red or green)
  • ½ cup chopped onions (white)
  • ¼ cup garlic
  • 6 pcs hot hog
  • 2 tbsp pickle relish
  • 3 8g MAGGI Magic Sarap
  • 1 TBSP salt
  • 3-4 TBSP all purpose flour
  • 1 egg
  • Aluminum foil
  • Raisin (optional)
Procedure:

1. Wash hands and prepare everything that’s needed

2. Combine all the food ingredients and mix until blended – in a bowl.

3. Divide the mixture into portions, depending on how many you want to make. Spread and flatten the mixture onto the center of each aluminum foil. Put slices of hotdogs so that each portion gets a share.

4. Carefully roll the aluminum foil into a tightly packed log about 1 inch to 2 inches in diameter, seal both ends.

5. Place the wrapped embutido in a steamer and steam for an hour.

6. Let it cool and slice it into rings to serve.

Tip: instead of using hotdog, you can use many alternatives: sliced hardboiled eggs, Vienna sausage, chorizo bilbao. Be creative, you can combine anything you want.

FOOD PREPARATIONS: PORK TOCINO

Pork Tocino

·         1 kilo pork loin
·         ½ TBSP salt
·         9-12 TBSP sugar
·         ½ TSP curing salt (praque powder)
·         1 TSP phosphate
·         ¼ cup water
·         2 TBSP anisado wine
·         ½ TSP MSG
·         1 tab 250 mg ascorbic acid (crushed)
·         ¼ cup pineapple juice (sweetened)
·         4 cloves minced garlic
·         Food coloring (red)

Procedure:

1. Wash hands and prepare everything that’s needed.


2. Slice pork thinly like tapa and set aside.


3. In a large mixing bowl, combine the salt, sugar, curing salt, phosphate, anisado wine, pine apple juice and MSG. Add a drop or two of red coloring in ¼ cup water and add to the mixture.


4. Add minced garlic and mix the mixture thoroughly.


5. Put the pork and by means of clean washed hands, mix the curing mixture thoroughly into the pork.


6. Let the pork stand in its marinade for 8 - 10hours in a refrigerator, not in the freezer compartment. After 8 – 10 hours, transfer the tocino into a plastic cellophane and store it in the freezer compartment ready for use.
