Tilapia Longganisa
- 1 kilo fillet
- 8 tbsp. brown sugar
- 8 tbsp. soy sauce (minced)
- 1 tbsp. black pepper
- Pig casing
- 1 tbsp. Salt
Procedure
- Clean the fish, remove internal organs, gills, scales etc.
- . . Behead the fish
- Wash thoroughly
- Fillet the fish
- Pass into grinder and mix all ingredients
- Stuff manually, wash and drain
- Pack using vacuum machine
- Keep frozen
